An outstanding wine. It is the best example of our thrive for excellence with aromatic complexity: white fruits (pear, apple), red fruits, spices, white and sweet flowers, balsamic and empyreumatic flavors.

BLEND: several terroirs, various vintages, and 7 different grape varieties: A majority of chardonnay, then roussanne , marsanne, viognier, grenache blanc, bourboulenc and vermentino.

WINE MAKING: Grapes come from vines looked after all year long. 50% of this wine has been vinified and aged in barrels, with a ten month batonnage, which has allowed us to preserve empyreumatic aromas (toasted bread, etc.) , the volume and richness brought by wood, without basic and primary aromas. The other half was vinified and aged in tanks. Low temperatureand inert atmosphere helped avoiding any oxidation. Making this wine, we aimed at the most important number of different aromas, always keeping a perfect balance in mouth, and a good ageing potential. Blend was made in winter 2009 and bottled in February 2010. Perfect for tasting in 2010 but will be able to age several years in a good cellar. 

TASTING NOTES: Nose: light red fruits, more intense white fruits (pear), sweet flowers (honeysuckle), then more peppered and spiced aromas come, like ginger.
Intense flavours in the palate : citrus fruits, with nice sweetness and salinity, very long with a candy final. This wine is special: retro olfaction gives in mouth some of the same aromas as nose did, but not in the same order, and other ones too, with different intensity. More mineral and balsamic in mouth, with light empyreumatic flavors (toasted, roasted).

"The non-vintage Xavier white, a blend of primarily Chardonnay with small quantities of Roussanne, Marsanne, Viognier, Grenache Blanc, Bourboulenc and Vermentino, is vinified and brought up in equal parts wood and tank. Most of this cuvee is from the 2009 vintage. It is a fresh, lively white offering lots of tropical fruit characteristics, medium body, crisp acidity and a big personality. It is a sensational bargain that can be enjoyed over the next year.

I visited the three owners of Xavier Vins, the young oenologist, Xavier Vignon, who is the brain trust behind so many of the wines, and his two partners. This relatively youthful, serious negociant company has been doing some extraordinary consulting work in Chateauneuf du Pape (…). They access gorgeous fruit from many different appellations and are doing a top-flight job of getting impressive quality into the bottle. Moreover, there are some top values in their portfolio as well."
