100% Sauvignon early harvested
TERROIR : 4 différent terroirs! Located close to Pic Saint Loup and Grès de Montpellier.
YIELDS: less than 50 hl er hectare in average.
WINE MAKING: harvest takes place at night, while heat is not damaging grapes. pressurage is done under cold and inert atmosphere too (without oxygen), at a low pressure. not harvest not treaded and not destemed to keep real sauvignon caracteristics, which can be easily damaged by oxidation.
Wine making under very low temperature (around 13°C, 55°F) and wine is kept with its yeasts during 3 months after tank fermentation.
TASTING NOTES: gold yellow robe. Noze: intense aromas of Canadian yew, with traditionnal vegetal notes of sauvignon like black currant bud. Nose goes further with exotic notes (grapefruit, peach). All these are now melted, almost cooked as it is a 2006, which should be loved by tasters who prefer old whites, waxed ones.
TO BE DRUNK WITH : Fish and seafood, white meats with sauce
