ASSEMBLAGE : 100% Muscat petits grains (small size grapes).
TERROIR : poor and sandy soils, in the heart of Dentelles de Montmirail.
YIELDS: Average of less than 30 hl per hectare.
WINE-MAKING : harvested at full maturity and hand sorted, wine making at low temperature to preserve varietal aromas. Good balance between sugar and alcohol (15% is the lowest percentage to deserve "Muscat de Beaumes de Venise" appellation). Traditional mutage to stop fermentation.
TASTING NOTES : intense yellow gold. powerfull and complex noze (lychee), and other exotic fruits and citrus. Very fresh in mouth, with fruit and flower flavours. very long.
This Muscat is unique because it has been made mainly with "small grape Muscat with white juice", a very scarce variety.
coming from 10 different areas, this wine has been made with grapes harvested at different levels of maturity, which makes a well balanced structure.
TO BE DRUNK WITH : aperitif, starters (foie gras, roquefort toasts). Dessert : with fresh fruits, chocolate and frozen nougat with almonds.
TEMPERATURE : 8 to 10 °C (46-50°F).
AGEING : superb today, but can wait another 7 to 10 years.
