A blend of the best we could find in Châteauneuf in this great vintage.

As its name point it out, we shall not disclose the origin of the famous domains which compose this wine.

BLEND: Half a dozen of grape varieties is present in this wine, with a dominant feature (60 %) of very old grenaches, then mourvèdre (20 %), and finally syrah (15 %). Other grape varieties, counoise, vaccarèse, etc. are minority but participate in the balance of this typical Châteauneuf.

YIELDS & HARVEST: 25 hectolitres by hectare on average, manualy harvested

WINE MAKING: Our methods are almost similar for all big wines of this assemblage. Strict monitoring of grapevines all year, harvests in perfect maturity, vinification of grape varieties separately or by couple, ageing in barrels (1/3 of new maximum) for syrah and mourvèdres, but for grenaches only when it's needed. Very weak dose of S02 and very light filtering.

COMMENTS: A big Châteauneuf: fruits red, black fruits, spices, garrigue. 2005 is great vintage. Health condition of grapevines was flawless, grapes were harvested in perfect ripeness. Result is flawless, with a nice saltiness brought by the old grenaches. The elegance of its tannins does not impose a long ageing for this Châteauneuf: already balanced and good to taste from June, 2008 (it was bottled in December, 2007), we can estimate its peak in 2015, without decline before 2020.

A very, very nice Châteauneuf.

SERVICE: at 15-17 ° (59-62°F), admits as well fine dishes as more rural dishes. Some culinary ideas: beef rib, Marengo Veal, duck in olives or roasted in figs, daube of boar, salmi of pigeon, 7 hours' lamb, crown of lamb in confites tomatoes, and of course various cheeses (Maroilles, Livarot...)

ALCOHOL: 14,6 % - SUGAR: <2 g/l (no residual sugars) - ACIDITY: 3,56 - PH: 3,53

IPT (indication of total polyphénols): 69 (when the average in Valley of Rhône is between 40 and 50): long ageing potential !
