BLEND : 100% Grenache ! A first time at Xavier. The excellence of Grenache in this vintage and the quality of the selection at parcel level allowed us to use only this Southern Rhone star for our Gigondas.
TERROIR : clay and limestone, rocky alluvial terraces (red clay) HARVEST: Hand harvesting (2 or 3 passes to obtain perfectly ripe grapes) with systematic destemming. Hand sorting of the grapes. Average yields are under 35 hl per hectare.
WINE MAKING: Our philosophy of wine production is generally the same: First of all we take a lot of care choosing the date of harvest, with daily analysis of grapes to avoid not perfectly ripe grapes, therefore no "green" defect in our wines. A first extraction of the tannins of dandruff takes place during a small week, in controlled temperature (around 10°C / 50°F), before fermentation, for silky and elegant tannins. Then the second extraction, with presence of alcohol, lasts 3 - 4 weeks. Finally, ageing takes place for 1/2 in inox tanks and 1/2 in French oak barrels (1/3 new, 1/3 one wine, 1/3 two wines). The diffusion of mineral salts, coming from the soils and the grapes, is favored thanks to the crushing and the desteming of the harvest.
TASTING NOTES: We wanted to obtain a wine with a lot of structure while remaining silky, aromatically powerful and complex with rich black olives and slight truffles notes. We are satisfied! The tannic structure of the wine is dense and will soften with the time in a good cellar. The length is typical of this kind of wine.
SERVICE: at 14C°- It will pair nicely with game dishes, grilled red meat or tasty meat stews, can also be tried with a dark chocolate fondant!
AGEING POTENTIAL: Nice as of 2012 it will evolve nicely for around then years.

“A sleeper of the vintage”, the blockbuster 2010 Gigondas is a spectacular effort from this appellation. Fashioned from 100% Grenache (somewhat unusual), it exhibits a deep ruby/purple color in addition to copious amounts of concentrated red and black fruits intermixed with hints of wet rocks and spice. Consume it over the next decade. »
