BLEND: 60% syrah, 30% Grenache, 10% Mourvedre
TERROIR and WINEMAKING: For a maximum of complexity, the different terroirs composing the Ventoux area were combined, notably nice plots located at the foot of the Mount Ventoux (on the laces of Montmirail), as well as the lands which brush the chain of Luberon, located on the village of Roussillon. Grapevines are mainly located in altitude. That gives freshness to the wine. The very frequent mistral dries the grapevines which benefit therefore from a perfect health condition and require a minimum of chemical treatments. 2/3 of this wine has been raised in vats and 1/3 in french oak barrels of 0,1 and 2 years old. Wines of the Côtes du Ventoux come from hard calcareous soil. Sediments, screes as well as ancient alluvium are present at it.
COMMENTS: We have used perfectly matured grapes. We so acquired the alliance fruity + flower + spices which allows the wine to be tasted young, while keeping a good potential of ageing. Besides the red, black fruits, with even a few exotic fruits brought by grenaches, the wooded mourvèdre brings a mineral key; the syrah brings spices, balsamic, and empyreumatique aromas. There is a nice balance between fruit and tannins. Our best Q/P ratio with 100% Xavier !
TO BE DRUNK WITH: White Meats, red meats, kitchen in herbes from Provence, seasoned dishes.
TEMPERATURE: 15°C (59°F).
AGEING: Nice from now on, it may be held in a good cellar another 5-7 years.
